Apricot Sorbet, no ice cream maker needed

It’s apricot season!! I love Summer, fresh fruit and veggies galore! Apricots, Corn, Radishes, Strawberries, etc 😀  Unfortunately, its also going to get really hot out.  What’s better to beat the heat than some fresh fruity sorbet!? Nothing. Obviously. 😉  But not everyone has the time or money for an expensive icecream maker, luckily, I found a way to make sorbet without one! All you need is a stove, a blender, and a large but not deep tupperware.

Here’s what you’ll need:

1 cup sugar

1 lb of Apricots, pitted and sliced

2/3 cup of champagne or other sparkling wine

2 cups of water

First,  put the sugar, apricots, champagne, and water in a pot to boil.

Reduce the heat and simmer, stirring occasionally, until apricots are very tender.

Transfer the mixture into blender and blend until smooth.

Add water until it equals 4 cups of liquid.

Pour mixture into a large but not deep tupperware and freeze overnight.

Serve with more champagne or sparkling wine. Enjoy!
